Spinach & Radish Salad with Honey Miso Dressing
A perfectly balanced crispy, crunchy salad to celebrate the freshness of spring
I made this dressing for my March supper clubs and it was such a hit that it was specially requested for another wine pairing event. This dressing would go well on many different dishes but it particularly shines with the fresh, crunchy, and lightly peppery flavors of spinach and radish.
Go get yourself some local radishes and spinach (they are in season you knowww) and give this salad a try!


Ingredients
3 Cups spinach
1 Cup thinly sliced radishes (I used a mandolin)
2-3 Tbs miso (I used white miso)
1 tsp red wine vinegar
1-2 Tbs honey
2-3 Tbs water
Instructions
Whisk together miso, vinegar, honey, and water. Adjust the ratio until you achieve your desired thickness and flavor. This dressing is strong to the taste, but with the mildness of the other ingredients it will all balance out.
depending on how stemmy your spinach is, you may want to remove the stems before cutting. For this salad, I like the spinach cut into small ribbons—but you could do it however you like.
thinly slice your radishes or use a mandolin.
mix vegetables together and dress lightly.
Top with the crunch of your choice. Some of my favorites include: hemp hearts, fried shallots, slivered almonds
