Ok so, maybe this should be called banana cake, but maybe I only feel that way because I put it in a round pan and topped it with flower petals.
This recipe can be as humble or as fancy as you want. Either way, it is dense, moist, and delicious.
Ingredients
Cake
½ cup maple syrup (can sub sugar or brown sugar)
2 eggs
1 cup mashed overripe banana
½ cup full-fat greek yogurt
1 tsp vanilla
¾ tsp salt
1 cup AP flour
½ cup hazelnut meal (or almond flour, oat flour, whole wheat flour, buckwheat flour, or more AP)
¾ tsp baking soda
½ cup butter (melted)
Glaze
½ cup tahini
1 cup powdered sugar
2-4 Tbs hot water
½ tsp cardamon
½ tsp cinnamon
¼ tsp allspice
Instructions
Whisk maple and egg until light and foamy ~1 min
Add in mashed banana, greek yogurt, vanilla, and salt. Mix well
Add in both flours and baking soda. Fold in with a rubber spatula.
Slowly fold in melted butter.
Pour into the greased pan of your choosing (I like a round pan with olive oil)
Bake at 350 until a cake tester inserted in the center comes out clean (30-60 minutes, depending on the pan)
While the cake is cooking, make your glaze. Nothing fancy here, just add all the glaze ingredients to a bowl and mix. Start with just a little hot water and add to get your desired consistency.
Wait for your cakes to cook before you put the glaze on. Top with sesame seeds for extra charm.
