One of my all-time favorite breakfasts. Savory, filling, full of clean ingredients and vegetables. This is one of those dishes that you can truly use as a base and then make it your own. Don’t like curry? Don’t add it! Got some bell peppers or leeks you need to use up? Add those or sub them out! I encourage experimentation of all forms in the kitchen.

But for the times when you don’t want to think about what to add or how to mix flavors together—here you go!
